In this chilly weather, sometimes you just need a warm bowl of comfort food, which to me is usually a heaping bowl of noodles, something I can no longer eat as I follow a Paleo Diet. Not long ago I discovered a spiralizer, a handy device that makes turning raw vegetables into faux pasta noodles, a quick and easy task. (Spiralizers are available through Amazon, Target and many other retail locations.) Produce pasta is fabulous for anyone who craves comfort food and, like me, enjoys twirling a fork through a pile of noodles.
Butternut squash is one of my favorite vegetables to spiral into noodles mostly because it is lower in water content than zucchini, so you don’t end up with a puddle of water on your plate or soggy faux pasta. Butternut squash is also a lower glycemic starch as compared to sweet potatoes, but very similar in taste. This squash is high in Vitamin C which can be a good boost for your immune system, especially during the cold winter months. Butternut squash is also high in B complex vitamins which may help regulate blood sugar.
You can dress up your butternut squash noodles with any of your favorite pasta sauces or meatballs, but this simple vegetable side with fresh basil, kalamata olives and crispy prosciutto bites is one of my favorite side dishes to accompany most any dinner meats.
To make this a complete meal, you could top the noodles with some chicken sausages or even grilled chicken. The noodles also store well in the refrigerator.
