Chef Doreen's Coconut Chicken Curry

Ingredients

  • 1 Lb boneless, skinless chicken breast cut into strips or cubes
  • 2 carrots, peeled and sliced
  • 1 white onion, diced
  • 6 oz. lite coconut milk
  • 3 garlic cloves, diced
  • ¼ Cup cilantro, chopped
  • 2 Tbs extra virgin olive oil
  • ½ Tbs curry powder, adjust amount to taste

Directions

  1. Season the chicken with salt and pepper and set aside
  2. Add the oil to a saucepan and saute the garlic and onion for 5 minutes at medium heat. Remove from heat and set aside.
  3. Brown the chicken for 2 minutes on each side at high heat.
  4. Reduce the heat to medium-low
  5. Add coconut milk, curry powder, and carrots. Stir well and let cook for another 5 to 7 minutes or until the chicken is completely cooked through and the mixture is slightly dry.
  6. Add fresh cilantro; salt and pepper to taste. 
  7. Serve as a wrap by using a lettuce leaf.
