Chef Doreen's Sweet Pea Chicken

Servings: 2


  • 12 ounces boneless, skinless chicken breast
  • 11 ounces fresh or frozen green peas
  • 1 small white onion, peeled and chopped
  • 1 carrot, peeled and sliced
  • 2 cloves of garlic, minced
  • ½ Cup white wine
  • 1 ½ Tbs extra virgin olive oil
  • 1 Tbs dry oregano
  • salt and pepper to taste
  • fresh parsley or cilantro for garnish


  1. Season the chicken with salt, pepper, and oregano.
  2. Heat the oil in a pan at medium-high heat, add the chicken and cook for 3 minutes on each side or until golden brown. Remove the chicken from the pan and set aside.
  3. Saute the garlic for 1 minutes. Add the onion and saute for 3 to 4 more minutes
  4. Add the wine and let simmer another minute.
  5. Add the browned chicken, carrot slices and green peas. Cover and let cook for 5 more minutes at low heat until the chicken is cooked through.
  6. Garnish with fresh parsley or cilantro and serve.
