Creamy Avocado Lemon Dressing

Ingredients

  • 1 avocado
  • 1 clove garlic, peeled
  • ¼ cup cilantro, roughly chopped
  • ¼ cup greek yogurt
  • 1 Tbs lemon juice
  • 3 Tbs olive oil
  • ¼ tsp ground black pepper
  • ¼ tsp kosher salt
  • 4 Tbs water

Directions

  1. Place all dressing ingredients in a food processor or blender. Process until smooth, stopping to scrape down the sides a few times.
  2. Thin the salad dressing out with about 1/4 cup water until it reaches a desired consistency.
  3. Keep in an airtight container in the refrigerator for 1-2 weeks.
