Darjeeling Iced Tea

(Makes 2 quarts)



  • 2 quarts tap water
  • 3 Tbs Loose Darjeeling tea leaves
  • 6 springs, fresh mint
  • sugar substitute to taste


  1. In a large pot, bring water to a boil. Place tea leaves in a tea ball or in a paper coffee filter and twist the filter closed.
  2. Add to boiling water.
  3. Remove from stove, cover, and let steep for 5 to 6 minutes.
  4. Remove tea leaves and stir in lemon juice.
  5. Cool to room temperature.
  6. Fill 6 tall glasses with ice and pour the tea into them.
  7. Garnish with mint sprig and offer sugar substitute to add to taste (if using).
