Easy Spinach Pie

Food writer and busy mom of 4, Alma Schneider, shares a family favorite. Eat this as a cold snack or a warm meal. It's delicious and sugar free.

  • 2 Tbs butter, separated
  • 1 onion, large
  • 1 lb thawed, frozen spinach, preferably organic and drained
  • 3 cloves garlic, minced
  • 6 eggs
  • ½ lb feta or cottage cheese
  • ½ tsp salt
  • ½ tsp pepper


  1. In a large frying pan over medium flame, add 1 Tbs of the butter.
  2. Add in the drained spinach and saute until heated through.
  3. Add in the salt and pepper, stir to combine and remove from the pan. Place in a large bowl.
  4. Wipe out the pan and lower the flame to low.
  5. Add in the second tablespoon of butter, chopped onions and garlic.
  6. When the onions are translucent, remove them from the pan with the garlic and add to the bowl of spinach.
  7. Stir the spinach and onions/garlic until all are combined and cool.
  8. Once cooled, add in the beaten eggs, crumbled feta or cottage cheese and place in an 8"X8" greased casserole dish.
  9. Bake for 30 minutes and eat hot or cold.
