Easy Vegan Pumpkin Spice Overnight Oats

Ingredients

  • ½ cup rolled, old-fashioned whole oats
  • ½ cup unsweetened almond milk
  • 2 tablespoons canned pumpkin puree
  • 1 tablespoon unsweetened apple sauce
  • 1 teaspoon chia seeds
  • ½ teaspoon cinnamon
  • 1/8 teaspoon pumpkin pie spice
  • 1/8 teaspoon kosher salt
  • 1 tablespoon walnuts, toasted

Directions

1. Combine all ingredients except walnuts in a mason jar. Stir well, cover and refrigerate for 7 to 8 hours overnight.
2. Warm oat mixture in microwave for 1 minute. Top with toasted walnuts.
