Turkey Meatloaf (Comfort Food on a Diabetes-Compatible Scale)

I love meat loaf. It is one of the great comfort foods. Even better, it makes an amazing sandwich the next day.

Back in the old days I started using ground turkey in place of beef in order to cut down on the fat in my diet. However, the original reason for meatloaf was to stretch the food dollar by adding less expensive bread to expensive meat to make it go further. This is the problem for so many of us with diabetes. We need to count our carbs.

Over the years I have come to like it even more than regular meat loaf. It is not just a substitute, it is delicious in its own right. Judge for yourself!

I have discovered that panko works better than bread crumbs in this recipe. It absorbs more liquid using a smaller amount than fine crumbs and adds a nice texture to the loaf.

The use of parmesan cheese helps to replace some of the bread usually found in a meatloaf. The cheese is far lower in carbohydrates than the bread and tastes so much better.

**Special note** For those of you that don’t like mushrooms--I know you are out there--you can use chopped sundried tomatoes or just more onion in their place.

Ingredients

  • ½ Cup Mushrooms
  • 1 Medium Onion, chopped
  • 1 Tbs Butter
  • 2 Cloves Garlic, grated
  • 2 Eggs Eggs, beaten
  • 1 Tbs Herbs de Provence
  • 1 Tsp Fresh parsley, chopped
  • 2 Tsp Dijon mustard
  • ¼ Cup Grated Parmesan cheese
  • ½ Cup Panko (instead of breadcrumbs)
  • 20 z 85% lean ground turkey

Directions

Preheat oven to 350 degrees.

In a skillet, cook the mushrooms in 1 tablespoon of butter until they just start to release their liquid. Allow to cool, then chop finely.

In a small sauce pan, over medium high heat, cook the butter and onions until the onions are a rich brown. Add the garlic and cook 30 seconds more. Add chopped mushrooms. Lower heat to a simmer and cook for 5 minutes. Let cool slightly.

In a large bowl, beat the eggs with the seasonings, mustard. Add the Parmesan cheese and Panko and mix to combine. Add the ground turkey then work with your hands to thoroughly combine.

Line a 9 x13 baking pan with foil and oil the foil or spray with cooking spray. Turn the meat mixture out onto the pan and flatten out to get rid of air pockets. Press the mixture into a bullet loaf shape.

For crust:

Combine mustards and mayonnaise and spoon over loaf. Top with Parmesan cheese.

Pour 1 cup water or chicken broth around the loaf to keep the loaf moist while cooking.

Bake at 350 for 1 hour.

Remove from the oven and allow to sit, covered for 10 minutes before slicing.
