Untidy Tom's (Sloppy Joe's lighter cousin)

Chef’s Notes: I started using ground turkey way back in the early “reduce your cholesterol” days. I have discovered that in meatloaf, hamburgers, and this dish the ground turkey is “almost” better.

Most of the carbohydrates come from the bread you serve this on. I use a sandwich thins or low carb pita bread (folded in half) and they work like a charm.

Unlike the usual Sloppy Joe’s, you will need a knife and fork to eat this.

Ingredients

  • 1 medium onion (sweet if possible)
  • 2 Tbs olive oil
  • ¾ lb ground turkey
  • 2 cloves garlic, grated
  • 1 Tbs Worcestershire sauce
  • 1 Tbs cider vinegar
  • 2 Tbs tomato paste
  • 1 Tbs Dijon mustard
  • ½ cup tomato sauce
  • ¼ cup chicken stock
  • 4 tsp granulated sugar substitute (or equivalent)
  • 2 drops Tabasco sauce

Directions

Slice one medium onion thinly. Over medium high heat, cook the onions in olive oil until lightly browned. Add the ground turkey and cook until well browned. If there is a lot of liquid, spoon out as much as you can before proceeding. Add the grated garlic and cook for 30 seconds.

Add ALL the remaining ingredients and stir to combine. Start with 2-3 drops of Tabasco sauce, and increase to taste. 

TASTE NOW to adjust the amount of Tabasco sauce in the recipe.

Cook over high heat to boil away excess liquid.

Salt and pepper to taste.

Serve over Arnold Whole Wheat Sandwich Thins or Joseph's Pita bread.

Great with either carrot pineapple salad or cole slaw.
