Greek Lemon Pepper Red Potatoes

  • 8 ounces red potatoes (about 1 ½ to 2 inches in diameter), quartered
  • 1 tablespoon olive oil
  • 4 tablespoons fresh lemon juice
  • ¼ teaspoon black pepper
  • 1/8 teaspoon oregano
  • dash of salt



  1. Preheat oven to 500 degrees. Line a small sheet pan or baking dish with parchment paper to prevent sticking.
  2. Combine olive oil, lemon juice, oregano and black pepper in a medium bowl.
  3. Slice potatoes into quarters; add potatoes to olive oil mixture and stir to coat well.
  4. Pour potatoes and remaining liquid onto sheet pan.
  5. Roast potatoes for 15 minutes; remove from oven and stir potatoes to help them brown evenly.
  6. Return to oven for about 15 minutes more, or until dark brown and soft when pierced with a fork.
  7. Sprinkle with dash (1/16 teaspoon) of salt before serving.
