Keto Avocado Chocolate Pudding (Vegan, Gluten Free)

  • ½ medium avocado (or 65 grams)
  • 1/3 cup coconut cream, canned (such as Trader Joe’s)
  • 1 teaspoon coconut oil
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons granulated erythritol (such as Swerve Granular)
  • 4 drops liquid stevia sweetener
  • ¼ teaspoon instant coffee granules
  • 1/8 teaspoon kosher salt


  1. Combine ingredients in a high-speed blender. Turn on low, increasing speed to high for 10 seconds, or until desired consistency.
  2. Serve into two 4-ounce ramekins and enjoy! This pudding is best enjoyed the same day, but cover and refrigerate it if you prefer to serve it later.
