Keto Cobb Salad with Avocado Lime Dressing

  • 3 cups mixed salad greens
  • ¼ cup cucumber, chopped
  • 1 teaspoon grape tomatoes, chopped (about 2 to 3)
  • 2 tablespoons blue cheese, crumbled
  • 1 slice bacon, crumbled
  • 1 hard-boiled egg
  • Ingredients for dressing:
  • ¼ medium avocado
  • 4 teaspoons olive oil
  • 1 ½ teaspoons lime juice
  • 1 tablespoon fresh cilantro leaves, finely chopped
  • 1 small garlic clove, pressed
  • pinch salt (optional)
  • 1-2 tablespoons water (to thin)


  1. Place salad greens in a medium-size serving bowl. Top with cucumber, tomatoes, blue cheese, bacon crumbles and a halved hard-boiled egg.
  2. In a small bowl, mash avocado. Add olive oil, lime juice, finely chopped cilantro leaves, pressed garlic clove, salt and combine until smooth with a fork. Add 1 to 2 tablespoons of water to thin if desired. (Or if you prefer a very smooth dressing and would like more than one serving, quadruple the recipe and mix in a blender. Leftover dressing will store without browning in a mason jar for 1 to 2 days.)
  3. Toss salad with dressing just before serving.
