Keto Creamy Spinach and Artichoke Salmon
Ingredients
- ¾ pound Alaskan sockeye salmon, thawed
- 5 ounces cream cheese, softened (not whipped)
- ¼ cup mayonnaise
- 1 egg
- 1 cup frozen spinach, thawed and squeezed to remove water
- 2 artichoke hearts, drained and chopped (from a can)
- 2 cloves garlic, crushed
- 1/3 cup mozzarella cheese
Directions
- Preheat oven to 400. Place salmon fillet in a baking dish. Set aside.
- Combine softened cream cheese, mayonnaise and egg and mix well with a fork until smooth.
- Stir in spinach, artichoke hearts, garlic and mozzarella cheese.
- Top salmon with spinach artichoke mixture.
- Bake at 400 for 15 to 20 minutes, or longer if necessary (depends on thickness of salmon fillets).
