Keto Creamy Spinach and Artichoke Salmon

Ingredients

  • ¾ pound Alaskan sockeye salmon, thawed
  • 5 ounces cream cheese, softened (not whipped)
  • ¼ cup mayonnaise
  • 1 egg
  • 1 cup frozen spinach, thawed and squeezed to remove water
  • 2 artichoke hearts, drained and chopped (from a can)
  • 2 cloves garlic, crushed
  • 1/3 cup mozzarella cheese

Directions

  1. Preheat oven to 400. Place salmon fillet in a baking dish. Set aside.
  2. Combine softened cream cheese, mayonnaise and egg and mix well with a fork until smooth.
  3. Stir in spinach, artichoke hearts, garlic and mozzarella cheese.
  4. Top salmon with spinach artichoke mixture.
  5. Bake at 400 for 15 to 20 minutes, or longer if necessary (depends on thickness of salmon fillets).
