Keto Lemon Ricotta Mug Cake (Gluten Free)

Ingredients

  • 1 teaspoon butter, melted
  • 1 tablespoon ricotta cheese
  • ½ teaspoon lemon juice
  • ¼ teaspoon lemon zest
  • ¼ teaspoon vanilla extract
  • 1 egg
  • 2 teaspoons stevia/erythritol blend (such as Splenda Naturals)
  • 1 tablespoon almond flour
  • 1 teaspoon coconut flour
  • 1/8 teaspoon baking soda
  • 1 tablespoon unsweetened whipped cream (optional)

Directions

  1. Melt butter for 30 seconds in a microwavable mug. Cool slightly. Stir in ricotta cheese, lemon juice, zest, vanilla extract and egg. Whisk until smooth.
  2. Add sweetener, almond flour, coconut flour and baking soda. Stir well.
  3. Microwave mug cake for 1 minute. Let cool slightly. Top with unsweetened whipped cream, if desired.
