Mediterranean Stuffed Mushrooms

  • 8 ounces (about 12) button mushrooms, cleaned with stems removed
  • 1 Tbs olive oil
  • 2 Tbs chopped onion
  • 2 garlic cloves, crushed
  • 2 cups fresh spinach
  • ¼ cup canned chick peas, drained and mashed
  • 2 Tbs marinated red bell pepper, diced
  • 1 Tbs feta cheese


  1. Preheat oven to 375.
  2. Heat skillet over medium heat. Add oil. Saute chopped mushroom stems for 5 minutes or until mushrooms begin to brown. Add onion; saute until soft. Add garlic and saute one minute.
  3. Add spinach leaves to skillet and toss until wilted. Remove skillet from heat.
  4. Stir in mashed chick peas, red bell pepper pieces, and feta cheese. Set aside to cool for a few minutes.
  5. Spray a mini muffin pan with nonstick spray. Fill each mushroom cap with about a tablespoon of stuffing and place in a mini muffin cup. (If you don’t have a mini muffin cup, you can use a sheet pan lined with parchment paper, although you may need to slice a bit of mushroom off the curved top to keep them from rolling around.)
  6. Bake at 375 for about 15 to 20 minutes. Serve warm.
