Miso-Roasted Brussels Sprouts

  • 1 lb Brussels sprouts
  • 1 tablespoon red miso paste
  • 1 tablespoon olive oil
  • 1 ½ teaspoons apple cider vinegar


  1. Preheat oven to 375° F 
  2. Prepare Brussels sprouts: wash thoroughly, remove stems and slice in half. 
  3. In a medium bowl, combine miso paste, olive oil and vinegar. Mix well; add Brussels sprouts and stir to coat evenly.
  4. Spread Brussels sprouts onto a large jelly roll pan.
  5. Roast for 20 minutes, or until fork tender and browned.
