Non-Alcoholic Irish Coffee

Ingredients

  • 24 ounces strong coffee, brewed (such as Irish crème flavored coffee)
  • 2 teaspoons dark brown sugar, divided
  • 1 teaspoon rum extract, divided
  • ¼ cup light whipping cream
  • 2 teaspoons stevia powder (such as Splenda Naturals)
  • Optional garnish: a pinch of green sprinkles for color

Directions

  1. Brew strong coffee. If you can find Irish Crème flavored coffee beans (or substitute Vanilla flavored), it provides extra flavor without adding calories or alcohol.
  2. While coffee is brewing, whip cream with stevia sweetener (for 10 seconds in a high-powered blender or with a hand mixer).
  3. Pour 6 ounces into an 8-ounce mug.
  4. Stir in ½ teaspoon brown sugar and ¼ teaspoon rum extract into each mug.
  5. Top each mug with 1 tablespoon whipped cream and sprinkles, if desired.

Notes:

  • If you can’t find Irish Crème flavored coffee beans, you can substitute Vanilla flavored coffee beans or regular coffee.
  • Rum or brandy extract can be used in this recipe, although brandy extract is more difficult to find. Both rum and brandy extracts often contain some alcohol. If you prefer and alcohol is not contraindicated, using an equal amount of Irish whiskey (1/4 teaspoon) doesn’t change the nutrient profile significantly.
  • The dark brown sugar adds a depth of flavor and only provides a few grams of carbohydrates for this festive treat. But feel free to substitute stevia for the brown sugar in this recipe, if you prefer.
