Red Cabbage and Baby Spinach Salad

Prep time:


  • 1 Tbs pine nuts
  • 2 Oz low salt and low fat baked ham
  • 1 ½ Tbs balsamic vinegar
  • ½ Tsp dijon mustard
  • 1/8 Tsp garlic powder
  • 1/8 Tsp sugar
  • 1/8 Tsp salt (optional)
  • 10 Oz shredded red cabbage
  • 10 Oz baby spinach, any tough stem removed


  1. Toast the pine nuts and set aside.
  2. Finely chop the ham. Place in a salad bowl.
  3. In a small bowl combine the balsamic vinegar, mustard, garlic, sugar, and salt (if using).
  4. Place the cabbage and spinach over the ham in the salad bowl. Toss with the dressing and top with pine nuts.
