Tomato and Cucumber Salad

Prep time:


  • 2 cucumbers, about 1 3/4 pounds
  • 6 medium vine-ripened tomatoes, about 3 pounds
  • 2 Tbs olive oil
  • ¼ Cups cilantro leaves
  • 1 Tsp ground cumin
  • freshly ground pepper


  1. Peeled and slice cucumbers very thin on the diagonal.
  2. Thinly slice tomatoes.
  3. Mince the cilantro leaves.
  4. Arrange the cucumber and tomato slices in overlapping circles on a large serving platter.
  5. In a glass measuring cup, whisk together the oil, lemon juice, cilantro, cumin, and pepper.
  6. Drizzle over the vegetables.
  7. Cover with plastic wrap and refrigerate until ready to serve.
