Spaghetti Squash Lasagna

  • 1 spaghetti squash, roasted and scooped out
  • 1 lb. ground turkey
  • ½ medium yellow onion, finely diced
  • 1 24-ounce jar of marinara sauce
  • 2 garlic cloves, finely chopped
  • 4 oz baby bella mushrooms
  • 1 medium red bell pepper, diced
  • 5 oz baby spinach
  • 1 cup mozzarella cheese, shredded (reserve some for topping)
  • ¼ cup Panko bread crumbs
  • 2 Tbs olive oil
  • 1 tsp oregano
  • ¼ tsp red pepper flakes
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper


  1. Preheat your oven to 350 degrees.
  2. Heat the onions with your olive oil in a large skillet over medium heat just until they become fragrant, add the garlic and continue to cook until your onions become translucent.
  3. Add the ground turkey as well as your seasoning. Be sure to mix well so that you can incorporate the onion mixture and seasoning into the meat as well as break up the meat as it cooks. This will give the turkey plenty of flavor and create a nice smooth meat sauce to mix your squash into.
  4. Once the meat is fully browned (you should not be able to see any raw chunks) pour in the marinara sauce and turn your heat down to medium low.
  5. Using a spatula fold in your spaghetti squash, mushrooms, spinach, red pepper, and 3/4 cup of the shredded mozzarella cheese until everything is mixed well.
  6. Pour into a greased 9" x15" casserole dish (I use basic cooking spray).
  7. Sprinkle the reserved cheese and panko breadcrumbs over the top and cover with foil.
  8. Bake for 20 minutes covered, remove foil and bake for an addition 5-10 minutes (until the top is golden brown).
